No need to formally introduce tzatziki – we all know it and love it. Highly popular in Greece and beyond, it combines the freshness of Greek Yoghurt with cucumber and herbs. We share a traditional recipe that we love and that you can have with a nice beer or wine (or even ouzo).⠀ ⠀ Serves 3 people as a starter⠀ ⠀ Ingredients⠀ ⠀ 500g Greek yoghurt⠀ 2-3 garlic cloves, minced⠀ Extra Virgin Olive Oil⠀ 1 organic lemon⠀ 1 tsp of mint, chopped⠀ ½ cucumber⠀ Salt & Pepper⠀ ⠀ Step by Step⠀ ⠀ 1) Peel and chop the cucumber into cubes, after removing seeds. Place it in a colander and put some salt on it so it drains out water.⠀ 2) Chop the mint leaves into small pieces.⠀ 3) Chop the garlic into small pieces. Then salt it and squeeze it so it becomes a puree. ⠀ 4) Take off the thyme leaves and chop them with a knife.⠀ 5) Squeeze the lemon into the yoghurt.⠀ 6) Mix all the rest of the ingredients and pour olive oil on the top of it.
