today’s bake was mini victoria sponges. i made a batch of small cakes so i could freeze some of them (unfilled) because it’s only my dad and i here and we struggle to make it all the way through a big one, despite our best efforts 😂 plus that means that once they’re defrosted i can fill them with whatever i like.
- Weigh 2 large eggs and then weigh out the same amount of softened butter, caster sugar, and self raising flour.
- Cream the butter and sugar until pale and fluffy. Lightly beat the eggs and slowly mix them in a bit at a time. Add 1/4 of a tsp if baking powder to the flour, before sieving and folding into the mixture. Beat in 1 1/2 tbsp of milk.
- Divide equally into cupcake cases and bake for 20-25 mins at 180 degrees celsius or 160 degrees for fan oven.
- Fill or top with whatever you like. Get inventive!
Note: You can easily change up the amount you make by using different amounts of eggs. Just adjust the quantities of the other ingredients accordingly.
