Strawberry tarte :
1 litre whole milk
1 snall tspn vanilla
3 egg yolks
1/2 cup tablespoons sugar
5 tablespoons cornstarch
1.Gather the ingredients and have them at the ready
2.In the medium-sized saucepan, heat the milk over medium heat almost to boiling.
While the milk is heating, mix the egg yolks and sugar together in the large bowl.
Then whisk in the cornstarch until the mixture is smooth.
3.Then gradually whisk the hot milk into the egg mixture. Do this very slowly as you don't want the yolks to cook from the heat of the milk.
4.Strain the mixture back into the saucepan
Place over medium heat, stirring or constantly whisking until the mixture thickens and reaches a boil. Continue cooking for half a minute longer, stirring hard and constantly to keep the pastry cream smooth
5.Remove the pastry cream from the heat. Stir in the vanilla flavoring at this point .
6.Place a layer of plastic wrap directly on the surface of the pastry cream to avoid a skin forming, and leave to cool to room temperature.
7.The pastry cream can be used when cool, or covered and refrigerated for up to several days until needed.
8.Stir chilled pastry cream before using.
3 cups flour
1 small tspn salt
1 large tspn sugar
8 tspn cold water
1 cup butter cutted in small cubes
1 egg yolk
1.Stir the flour and salt together in a large mixing bowl. Add the flattened butter straight from the fridge into the flour and rub in the mixture.
2.Add the sugar, mix together the eggs and egg yolk, and to the mixture. Gently mix with a dough scraper, or spatula, until the dough comes together in a ball.
3.Lightly flour a work surface, tip the pastry ball out onto it, and knead until you have a smooth soft dough. Shape the pastry into a square, to make it easier to roll out.
4.Place the dough the fridge to chill for an hour minimum, preferably overnight.
5.Remove the pastry from the fridge and lightly flour a work surface.
