In a Mixto Tequila, corn or cane sugars will be added. ⁠ ⁠ 💧 Distilleries using a traditional tahona usually ferment their Aguamiel with some of the agave fibres. These fibres float and form a seal, helping to trap aromatics. ⁠ ⁠ 💧 The product of the first distillation is called ordinario. After the second distillation, it can be called a Tequila.⁠ ⁠ 💧 There is no regulation to the maximum strength Tequila can be distilled to, so you could produce a very neutral tasting Tequila. ⁠ ⁠ Dont forget to save this post to revise later!⁠

  • A little different perspective of the lab still we’re using at @porch_jam It was definitely a challenge to decide exactly what botanicals to add to our rum. You can see some Bay leaves in there—they’ve definitely made the final ✂️ so has orange peel, cardamom, and more. And were only just starting to touch on fermentation today!⁠ ⁠ 🔴 After cooking, the piñas are shredded, traditionally this is done with a Tahona which is a kind of mill. Today only 6 Tequila producers (we know) use a traditional Tahona.⁠ ⁠ 🔴 They are; Patrón, La Altena (Tapatio), Fortaleza, Tequila Simbolo (Suerte), Casa San Matias, Destilerìa Colonial de Jalisco (Olmeca). ⁠ ⁠ 🔴 Most producers use modern roller mills. As the piñas are crushed, they are sprayed with water to wash off the aguamiel (sugary juice) from the fibres.⁠ ⁠ 🔴 Finally, it is squeezed to remove as much juice as possible. It is passed through a pachaquil which filters out larger fibres. The amount filtered out or let through will affect the final flavour. ⁠ ⁠ 🔴 The aguamiel will have the levels of fermentable sugars in it analyzed.   • Here’s a wide shot of the distilling setup we’re working with at @porch_jam to make our rum. To the right of the frame you’ll spot the ~800 gal pot still which is hooked up to whiskey/vodka columns. Behind that is an identical pot still connected to the same kind of columns but going from left to right to fit in the space better (kind of like how you put shoes into a box). The three little guys on the left are stainless steel collection vessels, and out of frame are the fermenters, hot liquor tank, cooling tower, and more. I didn’t get a chance to do a virtual tour of the Austrian distillery we were working out of, @kuenznaturbrennerei but I will definitely be doing so the next time that we go into the facility here in Nola!   • From business consultant to head distiller, Jason Barrett founded Rochester NYs first grain to glass craft distillery at just 24 years old. ~ Just over seven years ago Jason Barrett was working as a business consultant, brewing beers on the weekend for fun. Although originally he thought of starting a brewery, it became clear his passion for brewing translated to making bourbon, something no one else was doing in his hometown of Rochester. ~ Jason left his job, sold his home, moved back in with his parents, bought a still and dedicated himself to his ambition.   • Growing grain is not a plug-and-play process, and while going organic, looking for sustainable options, or simply aiming to do less environmental harm are admirable goals, every choice made on the farm has ripple effects.⁠ ⁠ There are things that distillers can learn, though, to be more fluent in discussing their goals with a farmer. At @MadAgriculture in Boulder, Colorado, a nonprofit that specializes in designing regenerative systems that support soil rehabilitation, biodiversity, and improving the watershed, co-founder Phil Taylor said they begin with a high-level view when working with a new brand.⁠ ⁠ To determine the best plan, he works with a company to identify their level of commitment to sustainable or regenerative sourcing. He looks at a graduated approach covering four agricultural paradigms or mindsets: extractive, where the goal is to simply harvest value out of the land; “do less harm,” where the goal is to mitigate some of the damage done in an industrial farm setting; “sustainability/do good”, with a goal of managing resources with a more long-term view; and finally regenerative, where the farm and the broader ecosystem are actively improved and managed in a holistic way.⁠ ⁠ He breaks each approach down further into three categories. The social aspect asks, “What’s the value of purchasing a grain locally versus (from) the commodity market?” There are then a variety of ecological factors, such as the use of cover crops, perennial rotation crops, tillage, compost, the balance of wild and cultivated spaces on the farm, whether the farm has pollinator habitats, and whether it’s organic or not.⁠ ⁠ The final factor, which is usually where Taylor starts with a company, is the economic question: “What are you willing to pay over commodity [prices]?
