Recipe for Malpua
Elaichi dana ......of 4 elaichies
Luke warm Milk.......1&1/2 cup
Desi Ghee.....to deep fry
For syrup (chashani) :-
Take atta in a bowl. Put Saunf and elaichi. Mix well. Add luck warm milk slowly and gradually to make a batter which can easily spread but it should not be too flowy. Every time you add milk, give a good mix so that lumps don't form. Let the batter stand for 10-15 minutes.
Meanwhile To make chashani, take a pan. Put water and sugar in it. Add saffron and elaichi. Cook till the sugar dissolves and the syrup becomes slightly sticky.
Now take a flat pan and put desi ghee in it. Heat the ghee for frying. Take a laddle full batter and pour in the ghee from a slight distance in a circular motion so that malpua takes its shape and size. Keep the flame medium high. When it is golden brown on one side turn it to other side. Let it take its colour. Take it out and soak in sugar syrup for 1-2 minutes . It is ready to be served with creamy khee. If you want you can garnish it with pistachio and slivered almonds.
