*Recipe Alert* Penne alla Arrabiata
Quarantine life has made me to come up with a simple recipe for my staple food "Pasta" with some basic ingredients! 😊
Servings - 2
*3 tbsp olive oil
*4 cloves of garlic (6, if small in size), finely chopped
*2 tbsp red chilli flakes/ if not available, 1 tsp of red chilli powder
*1 big onion, finely chopped
*1 tbsp tomato paste (omit if not available)
*2 big tomatoes, chopped
*2 tbsp butter
*1 tbsp ketchup (2 tbsp, if tomato paste wasn't added)
*1 medium sized capsicum, julienned (or any vegetables of your preference/ availability)
*1/2 tsp black pepper
*Salt, as per required
*3 tbsp mixed herbs (you can even use those packets that come with your pizza orders! 😄)
And of course, *penne pasta and water! 😅
*Take a deep container and add 1.5 litres of water.
*Add 3 tbsp of salt to the water, make it as salty as sea water.
*Bring it to a boil.
*After water starts boiling, add your pasta.
*Cook it for 10-12 minutes until it becomes "al dente", or as per your preference of softness.
*(Important) Save at least 250 ml of pasta water before draining your pasta.
*Take a pan and keep it on a medium-low heat for approx. 10 secs.
*Add olive oil and heat it for 10 secs.
3*Add garlic and red chilli flakes/ powder. Saute them for about 30 secs.
*Add onions and tomato paste. Increase the flame to medium-high. Saute them about a minute.
*Add tomatoes and cook them for a minute.
*Add butter and keep stirring the ingredients for a minute.
*Add capsicum and cook for about a minute.
*Add black pepper, mixed herbs and ketchup, and continue cooking for 8-10 minutes.
*In between, when the sauce starts to dry out or starts sticking to the pan, gradually add pasta water.
*If needed, add plain water to the sauce to keep cooking it. (Use pasta water cautiously as it is quite salty)
*When the sauce looks/ tastes almost done, add the cooked pasta to it along with 3-4 tbsp of water.
*Check for salt, add only if required.
*Cook your pasta in the sauce for 3-5 minutes.
*Top it with some mixed herbs and cheese.
