  • I’ve been trying to find bright spots these past few weeks, and this was one of them. • On Thursday, I went outside for the first time in a few days, and saw that an anonymous neighbor had left two bags of shelf-stable goods outside my home. (Since I’ve consistently been leaving stuff outside my home for ~1.5 years, it’s become an informal swap spot for my block, and people know they can give and take whatever’s there.) • All these cans of dog food are best by 2021, and most of the canned food was either unexpired or had expired within the past year (I personally eat recently expired food, but that’s something each person needs to determine). • What was too past the expiration date and/or in rusty cans I discarded; I composted any food, poured out liquids, and then recycled the cans. I know the person had only good intentions leaving those items, but unconsumed food does eventually go bad and I didn’t want anyone to get sick. • So thank you to the anonymous neighbor who generously left all of this outside my home, to be shared with our neighbors. It made my week, and I’m sure helped others

Can you freeze them? Can you share them? . All to often our EYES are BIGGER than our stomachs 👀, ESPECIALLY if/when we are “panic buying”. . We often overestimate the amount of food we will actually consume within a week, or two. At the same time we tend to underestimate what we may “feel like eating” or “take the time to cook” versus deciding to ordering in. . There is no one reason why we “waste” so much food.   • The most delicious homemade potato cheese and spring onion waffles, made with leftover mash from last night. . . Recipe : 3 cups cold mash, 2 eggs, 1/3 cup plain flour, good seasoning of s + p, a good handful or 2 of Grated Cheddar and a good few snips of spring onion. Right now where I live in Colchester, our council food waste collection has increased dramatically.........it is believed to be because after many people wiped the supermarket shelves & fridges of food and hoarded it, they’re now discarding it as they didn’t have time to eat it before it surpassed its used by date 🤦🏻‍♀️😣. . . I very rarely loose my sh** this way, but I am completely and utterly disgraced by this 😤 Our food banks are crying out for food! 4.1 million children are said to be living in poverty in the UK with basic essentials like food being compromised, children right now that rely on school for their food and nutrition and in some cases receive their only real meal of the day, are not being provided with that service. I can understand how this situation has us all panicked and how it has led to ‘panic buying’ but for God sake, if you’re not going to eat that food then don’t throw it away!! Donate it or give it to someone you know that will eat it. Who are these people 👎🏻🤦🏻‍♀️🤷🏻‍♀️ . . Not to mention the huge environmental impact of food waste! Makes my blood boil! . .   • Happy #Sunday everyone! For anyone living in #isolation or those who have been #furlough Sunday’s may not feel like they did a few weeks ago. But that doesn’t mean they can’t be #enjoyed . I’m busy cooking #toadinthehole with #potatogratin with BIG thanks to previous #batchcooking because right now I can’t get any potatoes at all! I thought now might be an apt time to share with you the #simplecooking of #homemade #stock. ALWAYS keep any carcass from a #leftovers #roast and also start a #tupperware box in your freezer for any #vegetable trimmings. Every time you have some #carrot tops and tails, #brocolli stalks, #onion trimmings etc etc etc, pop them in a box or bag in the freezer. Then, #heypresto you can quickly #conjure up the #mostdelicious #homemade stock from stuff you may have previously chucked in the bin.. Simply boil everything in a large pan add some #saltandpepper and #herbs if you have them, then drain through a sieve, pour into some #foodcontainers and chuck them in them freezer! Then you’re #goodtogo for #soup #gravy #noodles #casserole #rissoto and more! Please, minimise #foodwaste and make the most of what you have!

  • Roasted Cauliflower 🥦 No food waste! I was in charge of cooking dinner tonight, so I decided to make a vege feast with the starring ingredient of Cauliflower. I flicked through many recipe books to find the recipe that spoke to me, and this was it Charred Cauliflower with Tahini, Harissa and Honey from Feast by @sabrinaghayour - THIS WAS DELICIOUS!! As we are in a crisis situation and food is a sought after commodity right now, I wanted to utilise the whole cauliflower, and not waste the leave and stem that usually is thrown away. I roasted off these elements with a coating of salt, oil and paprika which formed a lovely ‘healthy’ crisp (picture 3), which worked well as a side dish to the main Cauliflower recipe. The family really enjoyed this #vegan meal, which made me super happy as normally my dad doesn’t believe a meal is complete without meat. So I’ll take that as a win!   • I’ve been cooking up a storm this weekend, to prepare meals and cut down on cooking time during the weekdays. This is rice porridge, with lobster and broccoli stalk. You can use whatever stock you like for rice porridge. Mine is from scratch. Remember those ribs? The bones (cleaned) were reused for the stock + lobster and sliced ham. The ham gives the stock an extra boost in flavor, but I strain it out (I’ll reuse it for breakfast another day. No food waste here). Rinse your rice (I use medium grain rice), and cook it directly in the stock. When the grains are starting to look plump and the stock has reduced/thickened up from the starch being released, you can throw the thinly sliced broccoli stalk in. I used broccoli stalk because I had some and wanted to reduce food waste. You can also use celery. It gives it a nice little crunch. The broccoli stalk added a little sweetness which I wasn’t expecting. I put the pre-cooked lobster (claw meat) in last when the porridge was close to done. What constitutes as done is really up to you. Some people like soupy porridge, I prefer mine closer to the consistency of risotto, or oatmeal.   • I hear this all the time, “my kid won’t eat leftovers and I don’t want to waste food!”⁣ I feel you!⁣ For example, I will eat leftovers, but my husband is a bit more particular about which ones reheat well. ⁣ What has saved our family, is deconstructing the meal and food as much as possible so that we can repurpose leftovers. By doing this we stretch our meals longer and it doesn’t feel like we are eating the same meal. ⁣ ⁣ This is also one of my favorite tips for selective eaters! ⁣ 🌱 Sometimes when things are all served together it overwhelms them! Too many textures, smells, colors, and temperatures. Serving the foods deconstructed let’s them explore each food on its own.⁣ ⁣ How I repurpose some deconstructed meals:⁣ 🌱Meats/Proteins: ⁣ -Keep them seasoned with basics like onion, garlic, salt/pepper. Made a carrot cake 🥕 and @melissa.hemsley parsnip Dahl (insanely good and the pickled red onions - swipe for photo - made it even more so). . . So with lots of veg to peel made some parsnip and carrot crisps which turned out better than I thought! Make sure you wash your veg before peeling, then toss the peels in oil and salt and whack them in the oven until crispy. 🧂(And yes I did eat them all as soon as they came out the oven 😋). . . I made these crackers for the first time today and was super impressed. They taste just like Wheat Thins to me, but with only 5 simple ingredients 👏🏽 The recipe I used is from @zerowastechef, and it’s customizable, so next time maybe I’ll try some cheesy crackers? 😉 .   • Quarantine cupboard and freezer clean out 🧐 Since we’re trying to go to the supermarket as little as possible these days - but without hoarding!! - I had to do a little clean out to make space for new things coming in. Found an out-of-date tin with pineapple chunks pineapple 🍍 and sweet bread buns 🍞 that had to get sacrificed for other items, and I felt like I wanted to experiment a little 👩‍🔬 using them in the same recipe 😍 Maybe an upside down pineapple cake?! I defrosted and dried the buns to make breadcrumbs.   • Its everyones favorite time of year...BEET SEASON! Ok, we know not everyone loves beets, but if you prepare them right theyre actually super delicious, not to mention nutritious. At Slow Food were always all about reducing food waste, but now that folks cant go to the store as often, were excited to see even more people getting down with the WHOLE fruit or veg – including beet greens! . But how do I store and use them? Glad you asked . Definitely separate beet greens from the roots when you bring them home. Brush off dirt, but dont wash roots until you are going to use them; store in your vegetable drawer until ready. The greens should be rinsed and wrapped in a clean, dry towel, and also stored in the vegetable drawer until ready to use. Roots will last about 3 weeks when stored this way and the greens are best within the first 4-5 days. According to SFDC Chair Ibti , beet greens are most delicious sautéed in olive oil with a sprinkle of salt and pepper + a clove or two of minced garlic, and then eaten over cooked rice or chopped into scrambled eggs.   • We have lots of aging apples at the moment, so I thought I would take the chance to make a crumble. . . This is an apple and blackberry crumble, we scoffed it down with clotted cream after a roast chicken lunch! . . Crumbles are a great way to use up fruit that is a little past it’s best. My 6 year old son made the crumble topping. The butter was a little too soft so it was more like a cookie dough topping. I think it may have been better than the original! . . The crumble topping was 155g soft butter, 155g plain flour and 100g caster sugar squished together with clean hands. I used 4 apples, stewed with a little water and a sprinkling of sugar. Once they were soft I placed it in a pie bowl and added the blackberries and the cookie dough topping. I baked it at 160C fan for about 50 minutes until it was golden and bubbly.   • DAY 13: ZERO WASTE SOUP. Serves 2-4. . . I’m still getting used to shopping less frequently and have accidentally overbought on veg - I bought enough for 7 meals when I last went shopping but I realised today that some of it was getting to be past it’s best and needed using up quickly. . . Now more than ever I think throwing away food would be CRAZY so here’s my recipe to use up any extra food you might have, or any leftovers in the fridge. . . From the stockpile: * 2 stock cubes (I used 1 veg and 1 chicken but you can use any) * 2 cloves of garlic * 1 tsp dried herbs (I used thyme but it would also be great with rosemary or mixed herbs) * 1 large knob of butter * 2 tbsp oil . . From the supermarket: * 1 onion (or leek or spring onion) * All your leftover veg (stalks, skins and leaves included - I had some brocolli, peas, potatoes, carrots and asparagus) * Cheese (I used about 60g of goats cheese but it would work with any cheese) . . Instructions: 1. Peel and roughly chop the onion and garlic 2. Heat a big frying pan over a low heat and add the butter and the oil 3. Once the butter has melted, add your onion and garlic and allow to soften 4. While it’s cooking, chop up the rest of your veg. No need to peel anything or chop any ends off, just cut into chunks and add to the pan along with the dried herbs. 5. Give everything a mix up and cook for 5-6 minutes until the veg is getting some colour. 6. Meanwhile, boil a kettle 7. Crumble the stock cubes into the pan and then top up with boiling water until your veg is just covered (I used 600ml) 8. Turn the heat up and bring to the boil 9. Boil until the veg is all cooked (best to check the hardest veg like carrots or potatoes) 10. If you’re using hard cheese like cheddar, grate this while you’re waiting. 11. Once the veg is all cooked, blend with a hand blender or a food processor until smooth. 12. Put the soup back on a low heat and add the cheese, stirring until melted. Season with salt and pepper. 13. Serve with a hunk of crusty bread for a healthy, hearty lunch with zero waste 👌🏼 #coronafoodies

  • HOW TO STORE CILANTRO - Are you like me (and the rest of the world)? You need some cilantro for your recipe. You go to the store and buy the only option they have for fresh cilantro - a GIANT BUNCH that’s about 30x what you need. You go home, chop up the little bit needed for your recipe, and the rest of the bunch either gets throw away immediately or you try to save it for a few days and it turns nasty in the fridge, so it still gets thrown away and 80% of the bunch gets wasted. - I say NO MORE! Here’s a super quick and easy way to make your cilantro last for WEEKS (this bunch is now about 3 weeks old and looks as fresh as day 1). - What you need: • Small glass jar that will fit your cilantro stems • A plastic baggie (sandwich size works best) • A rubber band • Cilantro - Simply cut the stems of your cilantro so they’re fresh, pick out any dead pieces, and place them in the jar with about an inch or so of water (enough to cover the stems). Place the baggie over the cilantro and rubber band it to keep everything airtight and in place! Keep this in the fridge. Voilà! Cilantro that will last 5x longer.

  • Last week when so many stores had empty shelves and I couldn’t find any fresh vegetables, then you appreciate food even more. Don’t take food for granted. So many people have to do without. For us it seems something so normal to have stores PACKED with food (and crap mostly, lets be honest). Everything processed and wrapped in plastic. So far from how Earth had intended food to be for us. Organic food is medicine. But most vegetables in non-organic stores are just, to be fair, poisoned with pesticides. Don’t underestimate the impact this has on your health and the earth. • Also food waste that is not being properly composted, is actually bad for the environment. If it’s stuck between “other trash” oxygen won’t be able to reach the bio waste and eventually it starts producing methane, which is worse than CO2. So try to use as much of your veggies, store leftovers and eat them the next day, finish things in your fridge before buying new things. Do yourself, the earth and your wallet a big pleasure. Keep veggies longer fresh by some handy hacks. For example, my favorite hack: Store spring onions and carrots in a jar with water. Super easy.   • Lets talk COMPOST! 🌱How do you compost, what do you do with the compost if your city doesnt collect it, and WHAT can be put in the compost?! 👇🏼⁠ ⁠ Here are 5 Composting Tips to help you get started:⁠ ⁠ 1. @ sharewaste - If you dont have access to a backyard compost of your own, you can use the @ sharewaste app to find and connect with other locals in your community that are already composting and will accept your compost! ⁠ ⁠ 2. What Can Be Composted - vegetable scraps, fruit scraps, eggshells, shredded paper and newspaper, leaves, napkins and paper towels, coffee grounds.⁠ ⁠ 3. Break it up - When it comes to compost the larger the material is, the longer it will take to decompose. So the more you can shred / break apart any organic waste, the faster it will decompose. ⁠ ⁠ 4. Allow for Air Circulation - Your outdoor compost bin needs oxygen! It should have holes or slats to allow air flow, and turning it regularly with a shovel will also help. This allows the good bacteria that is working to break down the compost to stay oxygenated and prevents the material from becoming compacted. ⁠ ⁠ 5. Nitrogen + Carbon - compost needs these two elements to break down! Adding leftover greens such as kale stems, lettuce ends, or even grass clippings in the summer will provide nitrogen.   • Introducing @anurbanharvester! For an entire year he dumpster dove to reveal supermarkets’ dirty secrets and documented it on his instagram page. 1/3rd of food is wasted globally. Enough to bring every single human out of hunger. The globalized, industrialized food system is a fiasco and he has been doing an amazing job of bringing attention to this. To not disclose his location, his identity was secret, but now I can finally share that it was my dear friend Matt all along. Matt and I cycled across the USA together in 2017 on the Green Riders Good Deeds on Bikes tour. We didnt know eachother when the tour started, but today I consider him one of my best friends. We were supposed to be traveling Eurupe together for ten weeks on my speaking tour but the current situation changed things up and he is still in Amsterdam, where we parted, while Im in France. We hope to be reunited soon! In the meantime, I highly recommend following his page. He is a true intellectual but does an excellent job of bringing environmental issues to us in an understandable way. Theres much that we can lern from Matt! Hes one of my favorite humans to talk to.   • I feel it now already. We are in the mid of change. Waking up and consciousness. We are in the mid of a global crisis. WE ALL TOGETHER (how good does that feel?). And after this crisis, we will feel an astonishing power and energy to rebuild, reconnect and relive. Maybe we feel it already now? But in rebuilding, reconnecting, we need to make decisions. Decisions that will result in a different world. Or we stay in the same world with the result of another crisis coming soon. Maybe we could think about the cause of disease. Prevent disease. In stead of fighting the symptoms. Maybe we could think differently about how we spend our time. Maybe we could think differently about how we spend our money.
